  • 1 3/4 cups powdered sugar
  • 2 teaspoons ground cinnamon
  • 1 pinch salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 large egg white (for icing)
  • 1 cup powdered sugar (for icing)
  • 1/2 teaspoon lemon juice (for icing)

Instructions

  1. In a mixing bowl, combine ground almonds, powdered sugar, ground cinnamon, and salt.
  2. In a separate bowl, beat egg whites until stiff peaks form. Fold in vanilla extract and lemon juice.
  3. Gently combine the egg mixture with the dry ingredients until just blended.
  4. Wrap dough in plastic wrap and chill for at least one hour.
  5. Preheat oven to 325°F (163°C) and line baking sheets with parchment paper.
  6. Roll out dough between two sheets of parchment to about 1/2 inch thick; cut into star shapes.
  7. For icing, whisk egg white until frothy; gradually add powdered sugar and lemon juice until smooth.
  8. Brush icing onto cookies before baking for 10-12 minutes until slightly firm.
