  • 1/2 medium red onion, finely diced
  • 1 rib celery, finely diced
  • 1/2 green bell pepper, finely diced
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 3 tablespoons white vinegar
  • 1/2 teaspoon black pepper
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon onion powder

Instructions

  1. Cook the elbow macaroni in salted water according to package directions until al dente. Drain and rinse under cool water.
  2. In a mixing bowl, combine mayonnaise, mustard, vinegar, black pepper, sugar, salt, garlic powder, and onion powder. Stir well.
  3. Add the finely diced onion, celery, and bell pepper to the dressing; mix until combined.
  4. In a large bowl, combine the cooled pasta with half of the dressing; toss to coat evenly.
  5. Cover and refrigerate both the pasta and remaining dressing for at least 2 hours.
  6. Before serving, add the remaining dressing to the pasta; toss again and adjust seasoning if necessary.
