  • 4 large eggs

  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • For frosting: 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and coconut extracts alternately with dry ingredients and coconut milk until just combined.
  5. Pour batter into prepared pans and bake for 25–30 minutes until golden brown. Let cool completely.
  6. For frosting, beat cream cheese and powdered sugar until smooth; whip heavy cream separately until stiff peaks form and fold into cream cheese mixture.
  7. Layer cooled cakes with frosting in between; frost the top and sides generously before pressing toasted coconut onto the cake.
