  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 cup brown sugar (for the crumb topping)
  • 1 cup flour (for the crumb topping)
  • 6 Tbsp cold butter (for the crumb topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8×4 inch loaf pans.
  2. In a bowl, mash bananas with brown sugar, vanilla extract, and cinnamon.
  3. Cream together softened butter and sugar until fluffy. Add eggs one at a time.
  4. Sift in flour, baking soda, and salt; mix until just combined. Stir in sour cream.
  5. Fold in the banana mixture gently until well incorporated.
  6. Pour batter into prepared pans and top with crumb mixture made of flour, brown sugar, and cold butter.
  7. Bake for about 60 minutes or until golden brown and a toothpick comes out clean.
