  • 3 lbs Russet or Idaho potatoes
  • 6 tbsp butter
  • 1/2 cup milk
  • 1/4 cup cooking water (as needed)
  • 1/2 lb bacon
  • 14 oz cabbage (1/2 medium head)
  • 2 large leeks
  • Salt and fresh cracked black pepper
  • 1/3 cup diced scallions (for garnish)

Instructions

  1. Peel and quarter the potatoes. Boil in salted water for 15-20 minutes until tender, then drain.
  2. In a frying pan, cook chopped bacon until crispy. Remove and sauté sliced leeks and chopped cabbage in the remaining drippings until tender.
  3. Mash drained potatoes with butter, milk, and cooking water to desired consistency.
  4. Fold the sautéed cabbage mixture into the mashed potatoes. Season with salt and black pepper as needed.
  5. Serve warm, garnished with diced scallions.
