Cottage cheese chicken salad is a refreshing and nutritious dish that brings together tender chicken, creamy cottage cheese, and crisp vegetables.

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup low-fat cottage cheese
  • 1 cup chopped celery
  • ½ cup finely diced red onion
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh herbs (dill or parsley)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Bake seasoned chicken breasts on the prepared baking sheet for 25-30 minutes until fully cooked; allow cooling for about 5 minutes.
  3. Chop the celery and finely dice the red onion while the chicken is baking.
  4. Shred the cooled chicken into bite-sized pieces.
  5. In a large mixing bowl, combine shredded chicken, cottage cheese, chopped celery, diced onion, Dijon mustard, and fresh herbs; stir until well combined.
  6. Adjust seasoning to taste before serving chilled or at room temperature.
