  • 1/2 cup granulated sugar

  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped pecans
  • 4 oz cream cheese (softened)
  • 2 tablespoons granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 teaspoons milk (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, combine mashed bananas, granulated sugar, brown sugar, egg, vegetable oil, and vanilla extract until smooth.
  4. Gradually fold in the dry ingredients until just combined. Gently fold in chopped pecans if desired.
  5. In another bowl, beat softened cream cheese with sugar and egg yolk until smooth; add milk if needed for consistency.
  6. Fill muffin cups about three-quarters full with batter and swirl in cream cheese mixture using a toothpick.
