  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each potato with a fork and microwave in a bowl for 4 minutes to soften.
  2. Flip the potatoes and microwave again for another 4 minutes.
  3. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Transfer the microwaved potatoes to a mixing bowl, drizzle with olive oil, and sprinkle with salt and pepper; toss to coat.
  5. Arrange on the baking sheet and gently smash each potato to about 3/8" thickness.
  6. Bake for 6 minutes, flip, then bake for another 6 minutes until crispy.
  7. Serve hot, garnished with fresh parsley.
