  • 2 tablespoons butter
  • 1/2 medium onion (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 23 cloves garlic (minced)
  • 3/4 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 pound uncooked potato gnocchi
  • 5.2 oz Boursin cheese (softened)
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil and butter in a deep skillet over medium-high heat. Sauté the chopped onion for about 4 minutes until translucent.
  2. Add sliced mushrooms and cook for around 5 minutes until tender.
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add chicken broth, heavy cream, and uncooked gnocchi. Cook uncovered, stirring often, for about 7 minutes or until the gnocchi is soft and the sauce thickens.
  5. Off the heat, stir in softened Boursin cheese and season with salt and pepper. Garnish with fresh parsley if desired.
