  • 2 tsp fennel seeds
  • 1 tbsp Italian seasoning

  • 3 tbsp tomato paste
  • ½ cup sun dried tomatoes
  • 2 cups vegetable stock
  • ¾ cup heavy cream
  • 1 cup grated cheese (parmesan or a plant-based alternative)
  • Fresh basil

Instructions

  1. Cook lentils according to package instructions until tender.
  2. In a large pan, heat oil from sundried tomatoes and sauté diced onion until soft.
  3. Add crushed garlic and fennel seeds; cook briefly until fragrant.
  4. Stir in smoked paprika, Italian seasoning, tomato paste, and chopped sundried tomatoes.
