  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 tablespoon tomato paste
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • 2 cups cooked white rice

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken drumsticks with salt, pepper, and smoked paprika.
  2. Heat olive oil in an ovenproof skillet over medium-high heat and sear drumsticks until golden brown, about 5–6 minutes.
  3. Transfer the skillet to the oven and roast for 20–25 minutes until fully cooked.
  4. In a separate saucepan, melt butter and sauté chopped onion and minced garlic until translucent.
  5. Stir in thyme, optional red pepper flakes, and flour; cook for one minute.
  6. Gradually whisk in chicken broth, then add heavy cream, tomato paste, and Dijon mustard. Simmer for about 5–6 minutes before stirring in chopped parsley.
  7. Return roasted chicken to the skillet with the sauce; let simmer together for 2–3 minutes.
  8. Serve hot over fluffy cooked rice and garnish with additional parsley.
