  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cups Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Brew coffee and let it cool.
  2. In a bowl, mix mascarpone cheese, sugars, pumpkin pie spice, and salt until combined. Add pumpkin puree and blend until smooth.
  3. Whip cold heavy cream until thickened and fold into the mascarpone mixture.
  4. Dip ladyfingers briefly in cooled coffee and layer them in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers; repeat layering with remaining ingredients.
  6. Pipe additional cream on top, cover, and chill for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder and enjoy!
