  • 8 oz Lean Ground Turkey
  • 1/2 medium Avocado
  • 1/4 cup Sour Cream
  • 6 Fajita-Sized Flour Tortillas (6")
  • 1 1/2 cups Shredded Monterey Jack Cheese
  • 3/4 cup Canned Black Beans
  • Fresh Cilantro, Lemon or Lime Juice, and Spices

Instructions

  1. Preheat oven to 425°F (220°C). Prepare a baking sheet by spraying or brushing with oil.
  2. Make the avocado sauce by blending avocado, sour cream, lemon/lime juice, cilantro, salt, and water until smooth. Chill in the fridge.
  3. In a pan over medium heat, cook ground turkey and onions in avocado oil with half of the taco seasoning until browned.
  4. Stir in black beans, green chiles, remaining seasoning, cilantro, and water; simmer for 15 minutes.
  5. Build tacos by spreading cheese on tortillas and adding turkey mixture. Fold and bake for 10-12 minutes until golden brown.
  6. Serve hot with avocado sauce.
