  • 1 lb fresh, skinless salmon fillets
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha, adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Cut salmon fillets into 1-inch cubes and pat dry.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each salmon cube in flour, dip in egg, then roll in the panko mixture.
  4. Heat vegetable oil in a skillet over medium heat until hot.
  5. Fry the coated salmon bites in batches for about 2-3 minutes per side until golden brown.
  6. Mix mayonnaise, sweet chili sauce, sriracha (to taste), honey, and lime juice to create the bang bang sauce.
  7. Serve warm with the sauce drizzled on top or on the side.
