  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 4 ciabatta rolls
  • 1 cup Caesar dressing
  • 1 cup chopped romaine lettuce
  • 1/2 cup shaved Parmesan cheese
  • 1 tbsp olive oil
  • Oil for frying

Instructions

  1. Marinate chicken breasts in buttermilk for at least one hour.
  2. In a shallow dish, combine flour, panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Beat eggs in another bowl.
  4. Coat chicken in buttermilk, dip in eggs, then coat with the breadcrumb mixture.
  5. Fry chicken in hot oil for about 5-7 minutes per side until golden brown and crispy.
  6. Toast ciabatta rolls lightly with olive oil on the inside.
  7. Assemble by spreading Caesar dressing on the rolls and adding lettuce and crispy chicken.
