  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 4 cups chopped spinach
  • 1 cup grape tomatoes, sliced
  • 1/2 cup corn
  • 1 1/2 cups diced cucumber
  • 1/4 cup chopped walnuts
  • 2 tablespoons sunflower seeds
  • 1 large avocado, sliced
  • 23 ounces Monterey jack cheese (optional)
  • 1/4 cup tahini
  • juice of 1 lime
  • 2 teaspoons honey
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 425°F.
  2. In a mixing bowl, toss chickpeas with avocado oil, chili powder, cumin, and salt until evenly coated.
  3. Spread chickpeas on a parchment-lined baking sheet and roast for about 20 minutes or until crispy.
  4. While roasting, assemble the salad by layering spinach, tomatoes, corn, diced cucumber, walnuts, sunflower seeds, and avocado in bowls.
  5. To make the dressing, whisk together tahini, lime juice, honey, and salt until smooth.
  6. Once the chickpeas are roasted, add them to the salad bowls and drizzle with tahini dressing before serving.
