  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari (or soy sauce)
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup (or honey)
  • 1 clove minced garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon chili crunch (adjust to taste)

Instructions

  1. Wash the cucumbers and chop them into bite-sized pieces.
  2. If using frozen edamame, boil water in a small pot and cook edamame according to package instructions for about 3-5 minutes. Drain and rinse under cold water.
  3. In a mixing bowl, whisk together olive oil, rice vinegar, tamari, sesame oil, maple syrup, minced garlic, grated ginger, and chili crunch until blended.
  4. In a large mixing bowl, combine chopped cucumbers, cooked edamame, and fresh herbs.
  5. Pour the dressing over the salad ingredients and toss gently until well coated.
