  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 4 slices of sourdough bread

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, mix panko breadcrumbs and Parmesan cheese.
  3. Season chicken breasts with salt and pepper on both sides.
  4. Coat each chicken breast in the breadcrumb mixture thoroughly.
  5. Heat olive oil in a skillet over medium-high heat and brown the chicken for about 3 minutes on each side.
  6. Transfer the chicken to a baking sheet and bake for 15-20 minutes until cooked through (internal temperature of 165°F / 74°C).
  7. Butter one side of each sourdough slice and grill them in a skillet until golden brown.
