  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 tablespoon butter
  • Optional: sliced cherry tomatoes for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix panko breadcrumbs and grated Parmesan cheese in a shallow dish. Season chicken breasts with salt and pepper, then coat in the breadcrumb mixture.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for about three minutes on each side until golden brown.
  4. Transfer chicken to a baking sheet and bake for 15-20 minutes or until internal temperature reaches 165°F (74°C).
  5. Butter one side of each sourdough slice and grill until crispy and golden brown.
  6. Once cooked, let chicken rest briefly before slicing into strips.
  7. Toss chopped romaine with Caesar dressing until well-coated.
  8. Assemble by layering dressed greens on one slice of grilled sourdough, followed by sliced chicken (add cherry tomatoes if desired), and top with another slice.
