  • 3 large English cucumbers
  • 1 small red onion
  • 1 cup white vinegar
  • 3/4 cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 tablespoon chopped fresh dill

Instructions

  1. In a small saucepan over medium-high heat, combine white vinegar, water, sugar, and salt. Whisk until the sugar dissolves completely. Remove from heat and let cool.
  2. Thinly slice the cucumbers and onion (1/16" to 1/8" thick). Use a mandoline slicer for even slices if desired.
  3. In a large mixing bowl, combine the sliced cucumbers and onion. Pour the cooled dressing over them and add the chopped dill. Fold together gently until well mixed.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
