  • 2 ¼ tsp active dry yeast
  • 1 ¼ cups warm water (105°F–110°F)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil (plus more for brushing)
  • 1 tbsp Italian herb blend
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a mixing bowl. Let sit for 5–7 minutes until foamy.
  2. Mix in olive oil, salt, and half of the flour until well combined. Gradually add the remaining flour to form a soft dough.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl and cover it with a cloth. Let rise in a warm place for about 1–1½ hours or until doubled in size.
  5. Punch down the dough gently, shape into a rectangle, then sprinkle minced garlic and cheese evenly across the surface.
  6. Roll up the dough tightly and place seam-side down in a greased loaf pan. Cover and let rise for another 30–40 minutes.
  7. Preheat your oven to 375°F (190°C). Brush the loaf with olive oil before baking.
  8. Bake for about 25–30 minutes until golden brown and hollow-sounding when tapped.
  9. Cool slightly before garnishing with parsley, slice, and enjoy.
