  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped turnip (or potato)
  • 2 ½ cups chopped sweet potato
  • 2 minced garlic cloves
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 1 cup green (or brown) lentils
  • 1 cup red lentils
  • 12 tablespoons turmeric
  • 1 teaspoon ginger
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup almond milk
  • 1 cup spinach
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat avocado oil over medium heat. Sauté onions, celery, turnip (or potato), and garlic for about 5 minutes until softened, then season with salt, pepper, and thyme.
  2. Stir in lentils, turmeric, ginger, and cumin; sauté for an additional minute to toast the spices. Add vegetable broth and water; bring to a boil.
  3. Cover and reduce heat to simmer for about 30 minutes until lentils are tender. Stir in almond milk, spinach, fresh herbs, lemon juice, and red pepper flakes before serving.
