  • 1 green bell pepper (diced)

  • 1 cup long grain white rice (uncooked)
  • 2 cups low-sodium chicken broth
  • 1 tbsp Cajun seasoning
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp smoked paprika
  • Chopped parsley or green onions for garnish

Instructions

  1. Season the chicken with Cajun seasoning, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on both sides. Remove and set aside.
