  • 2 cups uncooked orzo
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • 1/2 red onion, diced
  • 6 oz crumbled feta cheese
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Juice and zest of 1 lemon
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon honey
  • Sea salt and cracked pepper to taste

Instructions

  1. Cook the orzo according to package instructions. While it cooks, chop the vegetables.
  2. Drain the cooked orzo using a colander and rinse under cold water until cooled. Ensure all excess water is drained.
  3. In a large mixing bowl, combine the cooled orzo with the bell pepper, cucumber, red onion, garlic, parsley, basil, lemon juice and zest, olive oil, honey, salt, and pepper. Toss until well mixed.
  4. Gently fold in the crumbled feta cheese.
  5. Refrigerate until ready to serve. Toss again just before serving for freshness.
