Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a loaf pan or line it with parchment paper.
  2. In a bowl, combine flour, salt, baking powder, and sugar.
  3. In another bowl, whisk together orange zest, buttermilk, oil, eggs, orange juice, and vanilla.
  4. Gradually add dry ingredients to wet ingredients until just combined. Fold in cranberries gently.
  5. Pour batter into the prepared loaf pan and bake for about an hour or until a knife inserted comes out clean.
  6. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
