  • 1 cup water
  • 6 Tbsp unsalted butter (cut into pieces)
  • 1 Tbsp granulated sugar
  • ¼ tsp salt
  • 5.75 oz all-purpose flour (about 1 ⅓ cups)
  • 1 cup eggs (approx. 4 large eggs + 1 egg white = 8 ounces)
  • ¾ cup full fat eggnog
  • ¾ cup whole milk
  • 6 Tbsp granulated sugar
  • 3 Tbsp cornstarch
  • 3 egg yolks
  • 1 ½ Tbsp unsalted butter
  • 1 ½ tsp vanilla extract
  • ¼ tsp ground nutmeg
  • ⅛ tsp salt
  • 1 ¼ cups heavy cream
  • ⅓ cup powdered sugar

Instructions

  1. Preheat your oven to 425℉ and line two baking sheets with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt over medium heat until boiling. Add flour and stir until fully incorporated.
  3. Mix on medium speed in a stand mixer until slightly cooled. Gradually add eggs one by one until smooth.
  4. Pipe 1.5-inch rounds onto prepared sheets and bake at 425°F for 10-12 minutes; then lower the temperature to 350°F and bake for an additional 18-20 minutes until golden brown.
  5. Prepare the eggnog pastry cream by heating eggnog and milk; whisk together sugar and cornstarch with beaten eggs before combining everything in a saucepan to thicken.
  6. Make whipped cream by whipping heavy cream with powdered sugar until stiff peaks form; fold into cooled pastry cream.
  7. Fill each cooled puff with the eggnog cream.
