  • 34 pounds bone-in short ribs
  • 2 cups cabernet sauvignon wine
  • 3 cups beef stock
  • 1 large diced onion
  • 2 diced celery stalks
  • 2 diced carrots
  • 3 cloves crushed garlic
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons tomato concentrate
  • 2 bay leaves
  • 1 sprig of thyme
  • 1 sprig of oregano

Instructions

  1. Sear the seasoned short ribs in olive oil over medium-high heat until browned (about 3-4 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions, celery, carrots, and garlic until softened (about 5 minutes).
  3. Stir in tomato concentrate and cook for another minute; then add wine and scrape up brown bits from the bottom.
  4. Pour in beef stock along with bay leaves, thyme, and oregano.
  5. Return the short ribs to the pot and bring to a boil. Reduce heat to low, cover and simmer for about 150 minutes until tender.
