  • 1 medium onion, finely chopped
  • 5 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 2 large yellow onions, thinly sliced
  • 4 ounces shredded Gruyère cheese
  • 6 ounces shredded Havarti cheese
  • 1 egg
  • Almond meal or breadcrumbs

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, chopped onion, minced garlic, Parmesan cheese, almond meal (or breadcrumbs), parsley, egg, salt, and pepper until well mixed.
  3. Form mixture into 1½-inch meatballs and place on the prepared baking sheet. Bake for 15-20 minutes until cooked through (internal temperature reaches 165°F).
  4. While the meatballs bake, sauté sliced onions in olive oil and butter in a skillet over medium heat until golden brown (about 25 minutes). Add minced garlic and cook for an additional minute.
  5. Pour in beef broth along with thyme, onion powder, salt, and pepper; bring to a boil then simmer until thickened (about 5 minutes).
  6. Combine baked meatballs with the sauce in the skillet and sprinkle with Gruyère and Havarti cheese. Cover until cheese melts.
