  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the tartlet shells by cutting the Pâte Sucrée dough into portions and pressing them into tartlet pans. Freeze for 15-30 minutes.
  2. Preheat your oven to 375°F. Prick the frozen shells with a fork, line with parchment paper, and fill with weights. Bake until golden brown.
  3. For the strawberry jam, cook chopped strawberries with sugar in a saucepan over medium heat until thickened.
  4. Prepare the pastry cream by heating sweetened condensed milk, whole milk, and heavy cream until simmering. Temper egg yolks mixed with cornstarch into the hot mixture, then stir until thickened.
  5. Assemble by spreading strawberry jam in each shell and piping chilled pastry cream on top. Garnish with halved strawberries.
