  • 1 1/2 pounds ground chicken, beef, or turkey
  • 2 spaghetti squash, halved and seeds removed
  • 6 ounces frozen chopped spinach, thawed/squeezed dry
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup shredded provolone cheese
  • 8 cloves garlic
  • 3 tablespoons Italian seasoning
  • 1 1/4 cup grated parmesan
  • Kosher salt and black pepper
  • 1 tablespoon dijon mustard
  • 1/2 cup chopped fresh herbs (basil, thyme, oregano/sage)
  • 6 tablespoons salted butter

Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, mix whole milk, spinach, sun-dried tomatoes, and mozzarella. Season with salt and pepper.
  3. Place spaghetti squash halves cut side up on a baking sheet; sprinkle with salt and pepper and fill each half with the creamy mixture. Cover with foil and bake for 15 minutes.
  4. Combine ground chicken (or your chosen protein), Italian seasoning, dijon mustard, and remaining parmesan in another bowl; season with salt and pepper. Form into tablespoon-sized meatballs.
  5. After the squash has baked for 15 minutes, remove foil and arrange meatballs around them on the baking sheet. Bake for another 15 minutes until meatballs are cooked through.
  6. Sprinkle provolone cheese over squash and meatballs; bake for an additional 10-15 minutes until melted.
  7. Mix chopped garlic with butter and herbs; spread over meatballs before serving.
