  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper

Instructions

  1. Preheat your oven to 180°C (356°F). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft.
  2. Peel and dice the potatoes into large pieces. Boil in salted water until fork-tender, then drain and let steam dry for about 5 minutes.
  3. In a pot, combine the potatoes with mashed roasted garlic, melted butter, cream, and Parmesan. Season with salt and pepper; mash until smooth.
  4. Transfer the mixture to a piping bag and pipe swirled domes onto a baking tray lined with parchment.
  5. Drizzle with melted butter and bake at 200°C (400°F) for 15-20 minutes or until golden brown.
