  • 1/2 cup brown sugar (dark works well)

  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 1/4 cup molasses
  • 2/3 cup sour cream (full fat)
  • 2 teaspoons vanilla extract
  • 3 large eggs (whisked)
  • 1/3 cup unsalted butter (cut into cubes)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup whipping cream
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  2. Combine gingersnap crumbs and brown sugar in a bowl, then add melted butter and mix well. Press into the bottom of the springform pan.
  3. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugars and mix until fluffy.
  4. Incorporate spices, cornstarch, molasses, sour cream, vanilla extract, and whisked eggs one at a time until fully combined.
  5. Pour filling over the crust and bake in a water bath for about 60 minutes or until slightly jiggly in the center.
  6. Allow cooling gradually in the oven with door ajar before refrigerating for at least four hours or overnight.
