  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella (for topping)
  • Chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Season steak with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear steak pieces until browned, about 2–3 minutes each side. Remove from skillet.
  2. In the same skillet, melt butter. Add garlic and sauté until fragrant. Stir in flour to create a roux; cook for a minute. Gradually whisk in milk and beef broth until smooth. Stir in cheddar cheese until melted.
  3. Cook tortellini according to package instructions but slightly undercook them. Drain and toss with olive oil to prevent sticking.
  4. Grease a baking dish; combine cooked tortellini, seared steak, and cheese sauce. Mix gently and top with mozzarella.
  5. Bake uncovered for 20–25 minutes until golden and bubbly.
