  • 1 teaspoon salt
  • 1 tablespoon oil
  • 2 tablespoons butter or ghee
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder (adjust to taste)
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon sugar (optional) for balancing acidity
  • Salt and pepper to taste
  • ¼ cup chopped cilantro (for garnish)
  • 1 tablespoon lemon juice (for finishing)

Instructions

  1. Marinate the chicken: In a bowl, mix Greek yogurt, lemon juice, ginger-garlic paste, spices, and salt. Add the chicken pieces and coat well. Let marinate for at least 30 minutes.
  2. Cook the chicken: Heat oil and butter in a pan over medium heat. Add the marinated chicken and cook until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. Prepare the sauce: In the same pan, sauté chopped onions until translucent. Stir in minced garlic and grated ginger until fragrant, then add spices followed by tomato paste and crushed tomatoes. Simmer before adding back the chicken and pouring in heavy cream or coconut milk.
  4. Combine everything: Let simmer for about 15-20 minutes until thickened. Adjust seasoning if necessary.
