  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (room temperature, cut into 8 pieces)
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • 1 Tablespoon grapefruit zest
  • 1 cup grapefruit juice (or a combination of grapefruit and lemon juice)
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt; add butter until crumbly. Press into the bottom of a baking dish and bake for 18-20 minutes.
  3. Whisk together granulated sugar and additional flour in another bowl, then add eggs individually, mixing well after each addition. Stir in grapefruit zest and juice.
  4. Pour the filling over the baked crust and return to oven for another 20 minutes until set around the edges.
  5. Allow to cool completely before refrigerating for at least an hour before slicing into squares.
