  • 2 cod fillets (about 6 oz each)
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme, chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tbsp butter
  • 1/2 cup heavy cream
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, pepper, balsamic vinegar, and minced garlic. Spread on a baking sheet and roast for about 20 minutes until blistered.
  2. Pat cod fillets dry and rub with olive oil, smoked paprika, garlic powder, lemon juice, salt, and pepper.
  3. Grill the seasoned cod over medium-high heat for 3-4 minutes on each side until flaky.
  4. In a saucepan over low heat, melt butter and stir in heavy cream, sour cream, Dijon mustard, dill, lemon zest, salt, and pepper. Simmer gently for 2-3 minutes.
  5. Assemble by placing roasted tomatoes on a plate topped with grilled cod and drizzling creamy dill sauce over it.
