  • 6 large bell peppers (any color)
  • 1 pound lean ground beef
  • 1 cup cooked rice (white jasmine recommended)
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes or tomato sauce
  • 2 cups shredded cheddar cheese, divided
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce (optional)
  • 1/2 teaspoon Italian seasoning
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 400°F and prepare your ingredients.
  2. Cut the tops off the bell peppers and remove seeds/membrane. Place them cut-side up in a baking dish with 1 cup of water at the bottom.
  3. In a skillet, heat olive oil over medium-high heat. Sauté chopped onion and pepper tops until softened.
  4. Add ground beef to the skillet and cook until browned. Stir in minced garlic, crushed tomatoes, Worcestershire sauce, Italian seasoning, salt, and pepper.
  5. Mix in cooked rice and 1 cup of shredded cheese. Spoon this filling into each prepared pepper.
  6. Cover with foil and bake for about 40 minutes. Afterward, sprinkle remaining cheese on top and bake uncovered for an additional 5-10 minutes until melted.
