  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces Gruyère cheese (sliced into small cubes)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes for topping

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until bubbly.
  2. In another bowl, whisk together bread flour and fine sea salt. Gradually add to the yeast mixture along with olive oil. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place in a greased bowl, cover with a damp cloth, and let rise until doubled in size (1-2 hours).
  5. Gently punch down the risen dough and transfer to an oiled sheet pan. Stretch to fit the pan shape, creating dimples.
  6. Drizzle olive oil over the dough; top with Gruyère cubes, thyme leaves, and Maldon sea salt flakes.
  7. Cover and let rise again for 30 minutes while preheating the oven to 400°F (200°C).
  8. Bake for about 50 minutes until golden brown; cool slightly before serving.
