  • 175 g baking spread (or unsalted butter)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g unsalted butter (for frosting)
  • 400 g icing sugar
  • 150 g tinned custard
  • Green food coloring
  • Candy eyes and green sprinkles for decoration

Instructions

  1. Preheat oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin.
  2. In a bowl, cream together baking spread and sugar until fluffy.
  3. Add eggs and vanilla; mix until well combined.
  4. Gently fold in self-raising flour, then add black food coloring.
  5. Bake for 25-30 minutes until a skewer comes out clean. Cool completely.
  6. Core the cooled cupcakes and fill with colored custard.
  7. For frosting, beat together butter, icing sugar, vanilla, milk, and food coloring until smooth.
  8. Pipe frosting onto cupcakes and decorate with candy eyes and sprinkles.
