  • 2 cups cooked chicken breast (diced)
  • ½ to 1 cup cherry tomatoes (halved)
  • ¼ cup red onion (finely diced)
  • ¼ cup celery (finely diced)
  • ¼ cup red bell pepper (diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons lime juice
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • ¼ cup Greek yogurt (optional)

Instructions

  1. If using raw chicken, season with salt and pepper and grill or bake until cooked through (165°F/74°C). Cool and dice.
  2. Halve the avocados, remove the pit, and scoop the flesh into a mixing bowl.
  3. Mash the avocado using a fork until you reach your desired consistency.
  4. Add diced chicken, tomatoes, onion, celery, bell pepper, cilantro, lime juice, garlic powder, salt, and pepper to the bowl.
  5. Stir in Greek yogurt if desired for extra creaminess.
  6. Gently mix all ingredients until combined; adjust seasoning as needed.
