  • 1 lb ground chicken
  • 2 tsp olive oil
  • 1/2 cucumber (diced)
  • 1/4 red onion (diced)
  • 1/4 cup kalamata olives (sliced)
  • Juice of half a lemon
  • 2 tsp fresh dill (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 1 cup coconut yogurt
  • 3 tbsp cucumber (diced)
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of 1/4 lemon
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste (omit pepper for AIP)
  • Rice or cauliflower rice

Instructions

  1. Prepare the Greek Salsa: In a mixing bowl, combine diced cucumber, red onion, sliced olives, lemon juice, dill, parsley, salt, and pepper. Mix well and refrigerate.
  2. Make the Tzatziki Sauce: In another bowl, mix coconut yogurt with diced cucumber, dill, garlic powder, lemon juice, and salt. Set aside in the fridge.
  3. Cook the Ground Chicken: Heat olive oil in a skillet over medium heat. Add ground chicken, crumbling as it cooks. Season with garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper. Stir until fully cooked.
  4. Assemble Bowls: Place rice or cauliflower rice at the bottom of each bowl. Top with cooked chicken, Greek salsa, and tzatziki sauce.
