  • 4 cups butternut squash, diced and peeled
  • 1 lb ground turkey
  • 3 cups swiss chard, finely chopped
  • 1 cup couscous
  • 2 tbsp canola oil
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp canola oil
  • 1 1/2 cups red onion, minced
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced butternut squash with canola oil, nutmeg, cinnamon, salt, and black pepper until evenly coated.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. Meanwhile, prepare couscous by pouring boiling water over it in a pot and letting it sit covered for about 5 minutes.
  5. In a skillet over medium heat, sauté minced red onion in canola oil until translucent. Add ground turkey and spices; cook until browned.
  6. Stir in chopped swiss chard until wilted; squeeze fresh lemon juice over the mixture.
  7. Combine roasted squash with the turkey mixture and serve over fluffy couscous.
