  • 1 pound lean ground turkey
  • 1 cup diced canned tomatoes
  • 1 medium zucchini, grated
  • A large handful of spinach, chopped
  • 1 cup cheddar cheese, grated (optional)
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and poke sweet potatoes with a fork; bake on a parchment-lined sheet for about 45 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add ground turkey and seasonings. Cook until browned.
  3. Stir in diced tomatoes, zucchini, and spinach (and optional black beans or corn) until combined.
  4. Once sweet potatoes are cool enough to handle, slice them open and fluff the insides. Spoon the turkey mixture inside.
  5. Top with cheddar cheese if desired and return to the oven for 5-7 minutes until cheese is melted.
