  • 8 boneless, skinless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp finely chopped fresh parsley
  • 1/2 tsp chilli flakes
  • boiled rice

Instructions

  1. Coat chicken with cornflour, salt, and pepper.
  2. Heat vegetable oil in a large frying pan over high heat. Cook chicken until golden brown on both sides.
  3. Add unsalted butter and minced garlic to the pan; sauté until fragrant.
  4. In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour into the pan and bring to a boil.
  5. Simmer for 4-5 minutes until the sauce thickens and coats the chicken evenly.
  6. Garnish with parsley and chilli flakes before serving over boiled rice.
