  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/2 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • Salt and black pepper to taste
  • 2 tbsp chopped chives
  • 2 tbsp vegetable oil
  • 2 tbsp rice vinegar
  • 3/4 cup low sodium soy sauce
  • 1/2 cup low sodium chicken stock
  • 1/3 cup honey
  • 6 garlic cloves, minced
  • 1 tsp grated ginger

Instructions

  1. In a large mixing bowl, combine ground chicken, egg, bread crumbs, chopped onion, minced garlic, salt, pepper, and chives until well mixed.
  2. Preheat a medium pan over medium heat and add vegetable oil. Roll the mixture into 1-inch meatballs and cook covered for about 7 minutes. Flip them over and cook uncovered until golden brown.
  3. While cooking the meatballs, whisk together all teriyaki sauce ingredients in a bowl.
  4. Pour the teriyaki sauce into the pan with the meatballs and let simmer until thickened slightly.
  5. Toss meatballs in the sauce before serving.
