1 lb ground chicken
1 egg
1/2 cup bread crumbs
1/2 small yellow onion, finely chopped
3 garlic cloves, minced
Salt and black pepper to taste
2 tbsp chopped chives
2 tbsp vegetable oil
2 tbsp rice vinegar
3/4 cup low sodium soy sauce
1/2 cup low sodium chicken stock
1/3 cup honey
6 garlic cloves, minced
1 tsp grated ginger
Instructions
In a large mixing bowl, combine ground chicken, egg, bread crumbs, chopped onion, minced garlic, salt, pepper, and chives until well mixed.
Preheat a medium pan over medium heat and add vegetable oil. Roll the mixture into 1-inch meatballs and cook covered for about 7 minutes. Flip them over and cook uncovered until golden brown.
While cooking the meatballs, whisk together all teriyaki sauce ingredients in a bowl.
Pour the teriyaki sauce into the pan with the meatballs and let simmer until thickened slightly.
