  • 1 pound raw medium-sized shrimp (peeled and deveined)
  • 1 head butter lettuce (or 5 cups lettuce of choice)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (peeled and sliced)
  • 1/2 cup corn (fresh or frozen)
  • 1/3 cup crumbled queso fresco
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • Zest of a lime
  • 5 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon garlic powder
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. Prepare the vinaigrette by mixing olive oil, honey, lime zest and juice, chili powder, cumin, garlic powder, salt, and pepper in a small bowl.
  2. In a large bowl, coat the shrimp with three tablespoons of the vinaigrette and marinate for 15-30 minutes.
  3. Arrange lettuce on a serving platter and top with corn, tomatoes, avocado, and queso fresco.
  4. Heat olive oil in a skillet over medium-high heat. Cook shrimp for about 2-3 minutes until they are opaque.
  5. Combine cooked shrimp with the salad ingredients and garnish with cilantro.
