  • 1 cup heavy cream

  • 1 tablespoon fresh thyme (or dried)
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken for 6-7 minutes on each side until golden brown. Keep warm.
  3. In the same skillet, sauté chopped onions for 3-4 minutes until translucent; add minced garlic and cook for an additional minute.
  4. Pour in barley tea, scraping up browned bits; simmer for 5 minutes.
  5. Stir in chicken broth and let simmer for another 5 minutes.
  6. Lower heat; slowly add heavy cream while stirring. Mix in Dijon mustard and thyme, then simmer until slightly thickened.
  7. Return chicken to the skillet; let it absorb flavors for a couple of minutes before serving.
  8. Finish with butter for richness, garnish with parsley, and enjoy!
