  • 3 large russet potatoes
  • 3 large Yukon Gold potatoes
  • 1 medium onion
  • ½ head green cabbage
  • 6 slices crispy cooked bacon
  • 7 tablespoons unsalted butter
  • ½ cup heavy cream or whole milk
  • Kosher salt and fresh ground black pepper

Instructions

  1. Boil the potatoes in a large saucepan with salted water until fork-tender (about 15-20 minutes). Drain well.
  2. In a skillet, melt 2 tablespoons of butter over medium heat and sauté chopped onions until tender. Add chopped cabbage and cook until lightly browned.
  3. Mash the drained potatoes with remaining butter and cream until smooth. Stir in the cabbage mixture and half the bacon. Season with salt and pepper.
  4. Transfer to a serving bowl, top with remaining bacon, and add pats of butter on top.
