  • 8 ounces gluten-free pasta
  • 5 cups de-stemmed and chopped kale
  • 1/4 cup grated parmesan cheese
  • 1 can (15 ounces) chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the gluten-free pasta in salted water according to package instructions. Drain and cool.
  2. Preheat oven to 400°F. Rinse and dry chickpeas; toss with olive oil and spices. Spread on a baking sheet and roast for about 30 minutes until crispy.
  3. Remove stems from kale and chop into small pieces. Massage the kale with your hands to soften it.
  4. Whisk together mayonnaise, Greek yogurt, parmesan cheese, lemon juice, minced garlic, Dijon mustard, salt, and pepper for the dressing.
  5. In a large bowl, combine cooked pasta, roasted chickpeas, and chopped kale. Toss with dressing until well-coated.
