Ingredients

Scale
  • 6 cups chopped kale
  • 1/2 cup dried cranberries
  • 1/2 cup coarsely chopped walnuts
  • 1/2 cup crumbled feta cheese
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Prepare the kale by removing tough stalks and chopping into bite-sized pieces.
  2. Rinse thoroughly and dry using a salad spinner or paper towels.
  3. Massage the kale in a large bowl for about 30 seconds until tender.
  4. Drizzle with olive oil and massage again for even coating.
  5. Add cranberries, walnuts, lemon zest, and feta to the bowl but don’t mix yet.
  6. In a jar, combine dressing ingredients (olive oil, lemon juice, apple cider vinegar, honey, salt, pepper) and shake well.
  7. Pour dressing over the salad and toss until everything is evenly coated.
